Opening of GLoBar Smoothies Set Back for Sanitation Ordinances

GloBarSet to open in August, GLoBar Juice and Smoothies still have work to go.Their space on main street is being renovated from an office space into a restaurant.

The Galesburg Sanitary District informed them that the building would require a grease trap before they can open.

Sanitary District Director of Engineering and Maintenance Marshall Schrader says he stopped by GLoBar to make them aware of the ordinances in place.

Schrader says the sanitary district is not trying to discourage GLoBar, but letting them know of the rules the sanitary district had to put in place.

“We’re not being arbitrary and capricious when we say that restaurants have to have grease interceptions,” says Schrader. “The agencies that govern us are the ones that tell us that we have to have ordinances that regulate grease interception. Sometimes we get cast as the bad guy, but we have rules that we have to follow too, so, I wanna make sure we understand, we’re not just doing this for fun, we don’t wanna discourage business enterprise in Galesburg either.”

Schrader says this is the best time to have the grease trap installed, rather than down the road.
