
Tacos and Thai will be on the menu when the area’s newest food truck makes its Galesburg debut Saturday at Reserve Artisan Ales, 185 S. Kellogg St.
Operated by Laura Lytle of Knoxville and Devin Wyman of Gilson, Tacos and Thai will serve a blend of food items of the same name starting at 5 p.m. Saturday.
The Tacos and Thai Truck will start with a simple menu and will continually experiment with specials to gauge the interest of customers. Tacos will come in beef, chicken or shrimp varieties. Featuring locally sourced meats and produce, Tacos and Thai will offer beef, chicken or bean nachos. Tacos and nachos also will come in scratch-made naan shells and crisps.
Lytle tells WGIL, “We have tweaked and will continue to tweak our menu. Some things will change based on what’s available from the local farmers. We are keeping it small and running daily specials, hoping to get feedback about what should be added or changed to our permanent menu.”
A la carte items will include rice, beans, chips and salsa, naan and Yum Tom sauce, coconut shrimp ceviche and roasted street corn. Doggy tacos will be available for four-legged friends.
While Tacos and Thai will make its official debut Saturday, it has completed a few “unadvertised” lunches around the area.
“Unadvertised, as our goal was small and forgiving crowds from the various medical buildings in that area,” Lytle said. “Definitely hiccups, but overall they went well.”

Tacos and Thai will eventually offer a QR code and online ordering.
Lytle said it will be a few weeks before Tacos and Thai establishes a schedule, but it notice will be give on its Facebook page.
“We like doing lunches at the various medical buildings — they are often set away from down town areas and don’t have many quick food options around,” she said. “And our weekends will be at various events and festivals.”

Lytle and Wyman are based in the Knoxville-area, but are willing to take The Taco and Thai Truck to various spots around Central Illinois, including Galesburg.
