A new sandwich sandwich that promises to deliver a “sub above” plans to open early next summer in Galesburg.
Jersey Mike’s Subs, a New Jersey-based fast food chain, will open in the new Galesburg Commons retail development at 2200 N. Henderson St., site of the former Sirloin Stockade buffet restaurant.
Franchise owner Scott Miller tells WGIL he expects to get possession of the space in February, with hopes of opening the Galesburg Jersey Mike’s by June 2024. Miller owns five Jersey Mike’s, with two more locations expected to open this year. He said Galesburg will join future locations in Macomb, Quincy and Burlington, Iowa.
“I know Central Illinois very well, and have always thought Galesburg was a fantastic town,” Miller said. “So when we were looking for places to open, Galesburg was at the top of my list. Luckily, we were able to find a great location through Core Acquisitions.
“We’re really excited to be coming to Galesburg. It’s a great location.”

With over 2,500 locations nationwide, Jersey Mike’s Subs is known for its grilled subs featuring meats and cheeses on freshly baked bread.
“Jersey Mike’s is known for an amazing experience,” Miller said. “We have quality products sliced freshly in front of you. And Jersey Mike’s is notorious for engaging in the community, so we will be a really, really strong community partner.”
The Galesburg Jersey Mike’s will accommodate approximately 28 for indoor dining. It will be open from 10 a.m. to 9 p.m. daily.
A new Galesburg Goodwill will be the largest lessee in the two-building, multi-tenant retail center developed by Chicago-based Core Acquisitions. According to Adam Bell, vice president with Core, groundbreaking for both buildings will happen this month.
T-Mobile has signed a lease for the 2,200 square foot Retail 1 suite that will be located in the same building as Jersey Mike’s. Bell said 4,800 square feet remains available for lease.
