Chipotle and Goodwill by the end of the year and Jersey Mike’s to follow. Here’s the latest on the new Galesburg retail center

Restaurants Chipotle Mexican Grill and Jersey Mike’s, and telecommunications communications company T-Mobile are the three tenants that will occupy the 3-tenant building currently under construction at 2200 N. Henderson St., site of the former Sirloin Stockade buffet restaurant.

A popular fast-casual restaurant chain that specializes in Mexican-inspired cuisine is among the tenants expected to open by the end of the year in a new Galesburg retail development.

Restaurants Chipotle Mexican Grill and Jersey Mike’s, and telecommunications communications company T-Mobile are the three tenants that will occupy the 3-tenant building currently under construction at 2200 N. Henderson St., site of the former Sirloin Stockade buffet restaurant.

Galesburg Goodwill will be the largest retailer at Galesburg Commons and will occupy a stand-alone 15,000 square foot building on the north end of the development.

Adam Bell, vice president with Core Acquisitions, tells WGIL he expects most of the tenants “to be open by the end of the year, or shortly thereafter.

Interior work continued on all three spaces of the 3-tenant building Monday morning, while crews continued to enclose the Goodwill building.

“Chipotle has been turned over and they are now in their interior construction. We turned over to them last month and they generally have a 90 day buildout before opening,” Bell said.

“T-Mobile is turning over this week and we have done a vast majority of the buildout. They will be open this year.”

Chipotle will occupy the south end-cap of the three-tenant building that will be located on the south edge of the development.

Annie Gradinger, communications specialist for Chipotle Mexican Grill, previously told WGIL the restaurant will include a drive-thru “Chipotlane” that allows customers to place their order through the Chipotle mobile app or website, then pick it up a window, all without having to leave their vehicle.

Jersey Mike’s Subs, a New Jersey-based fast food chain, will occupy the center section of the three-tenant building. With over 2,500 locations nationwide, Jersey Mike’s Subs is known for its grilled subs featuring meats and cheeses on freshly baked bread.

Scott Miller, the franchise owner who will be bringing Jersey Mike’s to Galesburg, said Monday he expects the restaurant to be open in early February.

“We’re really excited to be coming to Galesburg,” Miller said. “We just opened a store in Quincy about four weeks ago, and now we’re getting ready for Galesburg.”

Increased space will allow the new Galesburg Goodwill to offer trailer and new goods buys, according to Johnson. The larger facility also will provide staff more room to produce and recycle donated items.

Goodwill expects to open by the end of 2024, according to Craig Armstrong, assistant director of communications.

Don Johnson, president and CEO of Goodwill Industries of Central Illinois, previously told WGIL, “This will not only bring the Galesburg store up to standards, it will be right up there with our biggest stores.

“With everything new and more products, I think everyone will be pleasantly surprised when they walk in the new store.”
