
A fast casual Mexican chain restaurant specializing in tacos, burritos and bowls will make its much-anticipated Galesburg debut next week.
A new Chipotle Mexican Grill will open Thursday at 2210 N. Henderson St., a restaurant communications specialist told WGIL. Chipotle, Jersey Mike’s, and telecommunications communications company T-Mobile will occupy the 3-tenant building at the site of the former Sirloin Stockade buffet restaurant.
The restaurant will feature the brand’s signature Chipotlane, a drive thru pick-up lane that allows guests to conveniently pick up digital orders without leaving their cars.
Chipotle will be open daily from 10:45 a.m. to 11 p.m.
Customers at the new Galesburg store can try Chipotle’s tender, Mexican-inspired Smoked Brisket, available for a limited time.
The company spokesperson said Chipotle is still hiring at the Galesburg location.
Jersey Mike’s Subs, a New Jersey-based fast food chain, will occupy the center section of the three-tenant building. With over 2,500 locations nationwide, Jersey Mike’s Subs is known for its grilled subs featuring meats and cheeses on freshly baked bread.
Scott Miller, the franchise owner who will be bringing Jersey Mike’s to Galesburg, said Friday he expects the restaurant to be open in late February.
Galesburg Goodwill will be the largest retailer at Galesburg Commons and will occupy a stand-alone 15,000 square foot building on the north end of the development. A Goodwill spokesperson told WGIL it could open sometime this month.
T-Mobile opened in late November at 2230 N. Henderson St. Hours are 11 a.m. to 6 p.m. Monday through Thursday, 11 a.m. to 7 p.m. Friday and Saturday, and noon to 5 p.m. Sunday.
